PASTASCIUTTA ..........


Pastasciutta is the Italian word for the countless, delicious pasta and sauce dishes that Neapolitans love so much.....



..... and I absolutely love it too !!!!



I could eat it everyday but restrict it to once a week .



I'm afraid that I never make my own pasta but that's not laziness .... I actually prefer dried pasta to fresh but .....




but, if Natalio here would like to come round and persuade me otherwise and give me a few lessons ..... !!!!!!!!



I read somewhere that Italians only make pasta for special occasions but perhaps my Italian blogging friend Maria who comments here can tell us if that's true or not.




I really don't mind what sauce is on it ..... it can be a simple fresh tomato sauce, primavera, vongole, bolognaise, lemon artichoke, cheese, alfredo, puttanesca, carbonara ..... whatever it is, I'll eat it !!!! My trouble is, I always cook enough pasta to feed the entire street !! ...... and, it's usually quicker to make a pasta sauce than to order a take-away.

You can even have brussel sprouts on it !!!!!!





I also love fish but that's another story !!!!

  1. Jacqueline, you can pop in here any time you want, even uninvited, I would rustle up a pasta dish for you in the flash of an eyelash. My Mr France calls me the pasta sauce queen, as I can make a sauce using any left overs from the fridge to top pasta. I too would take a course on how to make my own fresh pasta if was that guy with the tea towel slung over his shoulder in such a nonchalant way. I think he'll never be out of work after all your followers have seen this post , I'd share him with you. Love all your pictures,

  2. Oh Jacqueline.... you have touched my heart (stomach) here. I adore pasta in almost every way. Back in the 60's I had an Italian girlfriend who used to cook it with just garlic, olive oil, and a bit of chicken stock cube; it changed my view of pasta for ever. We eat it at least twice a week.

    1. We do sometimes have pasta more than once a week Cro ...... when I was doing this post , I had decided on fish for the evening but, looking at all that pasta I had to make it !! Your Italian girlfriend knew what she was doing ...... the best sauces are often the simplest aren't they ? XXXX

  5. Hi Jackie - fab pasta post, I'm almost hungry for a bowl and it's early morning here! You found some great photos.

    My favorite, and so easy to make in one bowl over one pot, pasta recipe, is very quick and enjoyed by all I've served it to. It's penne with gorgonzola sauce.

    Another, is this fabulous Brian Glover (what a great British chef/food writer) tagliatelle with squash (or can use pumpkin) and walnuts -

    1. I love pretty much any pasta sauce Mary and I have made it with gorgonzola. I'll definitely have a look at your link and make that one.
      It's a lovely sunny Spring day here but still a little cold....... it must be awful to be flooded out ..... I feel so sorry for anyone who has suffered flooding. XXXX

  6. Gorgeous photos Jacqueline. I have an Italian American friend that says her family eats pasta everyday. My personal favs are puttanesca and carbonara. So easy to make but I rarely cook any more.

  8. Mmmh - yummy, yummy - you make my mouth water, Jackie! I love both fresh and dried pasta - but the fresh one I buy (being lazy AND knowing when others can do it better). Son makes a wonderful fresh German sort of Bavarian pasta (yes, that really exists! But then: they are near Italy). I have cookbooks by Sophia Loren (and her book on beauty) - and she is a very sensible woman, I like her!

    I love pasta, but we do not eat it every day.
    In the old days, Italian housewives made fresh homemade pasta using their own hen eggs. Today the majority of woman work and do not have time.
    I make my own homemade pasta but not as my mum and grandmother taught me; they rolled the pastry "sheet" onto the table with a long rolling pin, allowed it to dry a little, then rolled it up and cut it into strips to form "tagliatelle". I now use a hand winding pasta machine - lazy me! I make it when I have guests or on special occasions, for example, I make homemade tortellini for Christmas.
    Dry pasta is just as good and 80 grams of dry pasta per person is the ideal amount to eat. Pasta does not make you fat it is the sauce you put on it that makes you fat.
    Oh, and by the way, may I share the chef with everyone here too.

    1. Ah ...... there you are Maria and thanks for helping me with my pasta measurements !!!!! I think that I always over estimate as I would hate not to cook enough !!!! haha
      We have a programme here called ' Two Greedy Italians ' with Antonio Carluccio and Gennaro Contaldo travelling around Italy cooking and talking about food and Italy. They said on one programme how many young Italian girls don't cook anymore like their mum's and grandmothers which is a shame isn't it ?
      Jamie Oliver does a good trick ..... he buys fresh lasagne sheets, rolls them and cuts them into tagliatelle !!! Mind you, it would be easier to just buy fresh tagliatelle !!!!

    I want to try making it at some point, but dried is fine w/us. At the Cleveland market they have a vendor who sells some beautiful pastas - my favorites the spinach and wild mushroom! xox

    1. Hi Carol ...... I do like cooking but I'm afraid that I can't be bothered to make my own pasta especially as I like the dried and fresh pasta that we can buy here.

Working on the PASTA sauce right now!CON FUNGHI questa sera!I married the MAN Born DOWN by NAPLES grew up in ROME...........therefore, WE EAT PASTA!I have never made it.......just do not have the space in the kitchen or the desire when I can get the ITALIAN stuff here.YOU are RIGHT........much faster then ordering TAKE OUT!MY favorite does not REALLY have a name CRUSHED TOMATOES,BUTTER, whipping cream and some basil.......EASY and FAST and PINK SAUCE!We always have PESTO on HAND.........HE makes it for the YEAR!I did a POST on it awhile back.............ITALIANS eat PASTA almost every night......or DAY.IN moderation of course....................BOUN APPETITO!XX

    1. My husband also says 100grams, Contessa, he and son would eat lots more when they make their own ( when, of course, I'm not looking!), but 80 is considered "ideal". I was "helping" Jackie on the amount so she needn't feed the entire street :-)

    My favorite pasta sauce is whatever I can throw together with the ingredients on hand. In fact, that's the way I prefer to cook everything these days. I no longer use recipes and
    I've given away all my cookbooks except Julia Child and Elizabeth David. And they are both just for reading.

    1. Ahwww, thanks Shawn ...... My posts and blog is a little shallow and I tend to do rather frivolous posts but then that was the sort of blog that I chose to do ..... I rather shy away from the deep and meaningful subjects !!!!
      .... and, that is what is so brilliant about pasta, isn't it ..... there's nearly always something in the fridge or cupboard that will make a delicious sauce.

    I share your love for pasta too. I had an Italian boyfriend who loved to cook and I picked up his recipes for: meat sauce, pasta and lasagna, which I cook weekly. The recipes survived which is more than I can say for Romeo. I sometimes saute courgettes, cut in the same long shape as spaghetti and add to the pasta. I saves a few calories.

      An Italian boyfriend seems like a good boyfriend to have, especially if he gave tips on pasta sauces !!!! Everyone seems to be into vegetable sprializers at the moment .... I couldn't completely substitute veg for pasta but mixing the two seems a great idea ..... thanks for the tip !!

  20. I adore pasta of any description, as long as it's vegetarian. Especially with a nice creamy sauce and a few tasty vegetables. I could cheerfully eat pasta every day of the week. My mother claims to love Italy and all things Italian, yet she's not keen on pasta or pizza. Make sense of that!

    1. I am not vegetarian but we don't eat a great deal of meat Nick ...... fish is my favourite.
      .... there are many vegetarians in our family and I have eaten some lovely vegetarian meals. My niece, who is a veggie, had a delicious vegetarian wedding breakfast...... I think that I just love food !!!!! Your mum is probably typical of her age group although, to give her credit, Italians do make some delicious meals that don't involve pasta or pizza don't they ?!!!! XXXX

  23. I love pasta too but only have it every so often. My favorite sauce is very simple - olive oil, lots of garlic, red pepper flakes and spinach or broccoli tossed in. Love it! Lots of love to you, Jackie. We are heading to London, West Yorkshire and Barcelona at the end of June. Getting excited! I hope all is well with you and Mr H and your lovely grandchildren!! Your posts always make me smile and chuckle...I'm sure many of us women could be convinced by "Julio" above. lol So....my favorite pasta...I do love Fettuccine but sadly, since my liver surgery 8 years or so ago, I can no longer eat it without it making me sick. So, I pretty much stick to a good spaghetti with a delicious homemade sauce that Michael makes. :)
